Shirunashi Dan Dan Noodle Masara (汁なし担々麺 麻沙羅)

Shirunashi Dan Dan Noodle Masara is a store that specializes in the Hiroshima local gourmet delicacy known as shirunashi dandan-men. Many customers gather to have a bite of their original spice blend, made with chili peppers and Japanese peppers, among other ingredients. Pretty much every item on the menu can have its piquancy (the amount of chili pepper) and numbness (the amount of Japanese pepper) adjust from zero (none at all) to four (the maximum amount), so customers who like it hot as well as those who do not can partake in these tasty noodles.

What makes Shirunashi Dan Dan Noodle Masara unique is the spice blend that can only be tasted here, as well as the chewy, flat noodles made with domestic wheat flour. The hot oil used in the shirunashi tantan-men of course contains the basic chili pepper and Japanese pepper for its spiciness, but also employs the cosmopolitan accents of spices like cumin and cinnamon to achieve a superb balance unmatched by any other similar restaurant.
