Sobadokoro Minori (そば処 みのり)
Soba Restaurant Minori is located about a 10-minute drive from the Shobara Interchange on the Chugoku Expressway. It is the most popular and talented soba restaurant in Shobara, and has been awarded a Bib Gourmand by the Hiroshima Michelin Guide. However, they are open only for lunch.
For those with allergies, soba may cause a severe allergic reaction. It is recommended that you check for allergies via a patch test, etc. before eating.

At Sobadokoro Minori, you can try “Juwari Soba,” a type of buckwheat noodle made with only buckwheat flour and no wheat flour, hence the name (十割, or “juwari” means 100%). It is said that it is a difficult dish to make without the use of wheat flour or any other binder, and requires high quality buckwheat flour and sophisticated techniques. The best buckwheat flour for each season–spring, summer, autumn, and winter–is selected and combined to provide crunchy buckwheat noodles.
