The chicken served at the Iikagenya Hiroshima Store is “Choshu Herb Chicken,” which is a brand of chickens that were raised on a diet of herbs in the wide-open pastures of Yamaguchi Prefecture. On top of the already invigorating flavor of Herb Chicken, which is grilled using high-grade ubame oak charcoal, the chicken skin obtains a crispy texture due to the effects of the charcoal’s infrared radiation, which seals the juices inside the meat.
