Moment of Joy
At the Soba Restaurant Minori, you can try “Jyuwari Soba,” a type of buckwheat noodle made with only buckwheat flour and no wheat flour. It is said that it is a difficult dish to make without the use of wheat flour or any other binder, and requires high quality buckwheat flour and sophisticated techniques. At Soba Restaurant Minori, we carefully select the best buckwheat flour for each season, spring, summer, autumn, and winter, and combine them to provide crunchy buckwheat noodles.
